This is my new favorite soup! I have made it three times since last wednesday.
Pea and garlic soup
-Some olive oil or budder
-Some garlic, chopped
-Some frozen peas
-Some broth
Sautee some garlic in some olive oil or some budder (i used leftover herb budder from book club) until it softens. Make sure to use low heat so the garlic doesn't burn.
Add in some peas (peas are the base for the soup, so add in peas until the pot is at about the level you'd like the final pot of soup to be) and just enough broth to cover them.
Boil for 10 minutesish, or until the peas are softish. Let it cool a little bit. Then puree it in the blender, or use an immersion blender.
